I know, use signal. I have some family members who I cannot get to use signal, so we continue to use telegram.

For telegram you have an open issue on their tracker that you can vote for. A quick search didn’t really give me any results of iOS forks that allow disabling AI, so either none have it, or they don’t mention it directly…
